So after many months, I finally got to taste the concoction, and I wasn't impressed. I recorded a video of the first taste (see below, sorry for the poor audio). It really wasn't very good, and I'm kind of disappointed to have wasted the vodka. It wasn't nearly as good as the pomegranate cordial I made last year. Just as well, I could have poisoned myself. Much like the seeds of its relative the apple, loquat seeds contain cyanogenic glycosides, which release cyanide when broken down in the stomach. Since the final product didn't smell and taste like cherries, I have doubts about how safe it is to consume. Greene Deane may still be alive and well, but I'm not willing to put my stomach on the line.
Loquat seeds soaking in vodka. According to Green Deane Jordan, a nice drink he calls loquat grappa can be made with loquat seeds. To make it you soak the seeds in vodka for a few months, and then add in a 50-50 sugar-water solution. He says the seeds give the liqueur a cherry-like flavor, and that people that say that they taste like almonds don't know what they're talking about. Well I tried his recipe, and I think it smells and tastes like almonds. I soaked loquat seeds in vodka for around five months, and the resulting liqueur does smell a bit like cherries, but also almond. I even got out a bottle of almond extract to compare, and there is no denying that loquat seed-infused vodka has an almond flavor. Maybe the loquat seeds Green Deane used from Florida have a cherry flavor, but our Texas loquats have an almond flavor. What I did with mine was fill quart jar 2/3 full of loquat seed. Then added vodka to some jars and rum to others. I let it sit over 5 mos. Then, I added a sugar solution then let it sit for about a month more. Pretty delicious but strong! You can only drink about 2 shots.
